Cheap Meal



Ever since living in Costa Rica I have been in LOVE with legumes, sans green beans, and I am more than happy to eat them every day. Which works really well for our tight grocery budget of $25 a week. We only buy our legumes raw and cook them ourselves - which is really easy and cheap.

Anyway, so this is one of our favorite recipes, we got it from my mom. Refried without the "fry". This makes a big batch, so we'll eat it for 2 nights and then freeze the rest. Mmmmmmm.

4 cups beans
12 cups water
1 large onion
2-4 anaheims (or 2 anaheims 1 jalapeno)
2 large cloves garlic
6 1/2 teaspoons salt
2 1/4 teaspoons black pepper
1 teaspoon chicken bouillon (or one cube)

Place all ingredients in a slow cooker. Cook on high for 8 hours, adding more water as needed. If more than 1 cup of water evaporates during cooking, then temperature is too high.

Strain the bean mixture. Do not rinse. Mash the beans with a potato masher, adding water as needed to attain desired consistency.

Then get a tortilla, beans, rice, salsa, avocado...and you've got the perfect burrito!!
